Sous-Vide Dishes by Groupe Ferreira

Duck confit & fig parmetier

 

Ingredients: shredded duck confit, figs, carots, white wine covered with a potato purée

$24 for 2

Instructions:

1) Put in the oven, uncovered, at 350°c for 30 minutes

porc, chouriço & chickpea feijoada

Traditional portuguese stew made with chickpeas, porc, chouriço, tomatoes, onions and peppers

$21 for 2

Instructions:

1) Put the sous-vide bag (that has been on the counter for about 30min for it not to be too cold) in a pot of boiling water on the stove for 12-15 minutes.

2) open the bag and enjoy!

Seafood rice

Rice cooked in a fish broth with clams, mussels, shrimp, calamari, cod and salmon

$35 for 2

Instructions:

1) Open the sous-vide bag and put the seafood rice in a pot

2) Cook it until warm while stirring occasionally

RIZ AUX FRUITS DE MER

Grilled Octopus

Grilled octopus, potatoes, onions, peppers and F olive oil

$25 for 1

Instructions:

1) Open the sous-vide bag and what’s inside in a pan

2) Put the pan in the oven at 375°c during 10-15 minutes or until warm

Tips: drip some F olive oil and Ferreira fleur de sel on top before serving

 or

1) Put the sous-vide bag (that has been on the counter for about 30min for it not to be too cold) in a pot of boiling water on the stove for 10-12 minutes.

2) open the bag and enjoy!

PIEUVRE GRILLÉE

Red wine chicken stew

Red wine marinated chicken cooked slowly with peppers, carrots, celeri and potatoes

$16 for 1

Instructions:

1) put the sous-vide bag (that has been on the counter for about 30min for it not to be too cold) in a pot of boiling water on the stove for 12-15 minutes.

2) open the bag and enjoy!

Marinated & ready to cook Campo chicken

1) Take the chicken out of the bag

2) Grill on your BBQ or put in a pan in the oven at 375°c until fully cooked

Tip: once cooked, drizzle it with our Campo sauce
